Becoming a mom changes a million things for everyone.
One of the bigger changes I had to over come? Learning how to cook. Being a young mother who was somewhat unprepared for everything motherhood entailed, I had really no experience cooking other than canned soup, frozen pizza, & mac & cheese (sad I know). So, with help from both my mother-in-law, Brenda, and my mother, Debbie, (and Pinterest, ALOT of Pinterest!) I quickly picked up on the art of cooking, and found that I really enjoyed it! (Especially baking… I really LOVE baking). But one thing that took me awhile to perfect was probably one of the most common recipes out there. The chocolate chip cookie.
I mean with literally one million and one recipes out there how do you find the best one? I tried dozens, some better than others, but none of them where exactly what I was looking for. Then Pinterest finally gave me a break! It lead me to a recipe on a blog called Sally’s Baking Addiction.
They were delicious, and DEFINATELY the best cookies to date! Then, something great happened, I accidentally made them better!
How? Well… The recipe calls for 1 1/2 sticks of unsalted butter. And… I had 1 stick, and 5 1/2 table spoons. Who really saves that 1 1/2 table spoons? So I thought what the heck, melted it all and put it in there! Then, I realized was out of light brown sugar, and all I had was dark brown sugar, it was too late to turn back now… so I thought, well this will work right? So I tried it. I put in 2 full eggs instead of one egg and 1 egg yolk. At this point I had a little more liquid than the recipe called for, so I thought I would go ahead and put in 1 full TABLESPOON of corn starch instead of the 1 1/2 teaspoon the recipe calls for.
And the result?
Literally melt in your mouth delicious! Soft in the middle with a hint of crunch around the outside, perfection. Without a doubt, the BEST cookies I had EVER tasted!
The best part… they stay this way, even when they are cooled!
- 2 and 1/4 cups (280 grams) all-purpose flour
- 1 teaspoon baking soda
- 1 tablespoon cornstarch
- 1/2 teaspoon salt
- 1 stick and approximately 5 table spoons unsalted butter, melted
- 3/4 cup (150 grams) dark brown sugar, loosely packed
- 1/2 cup (100 grams) granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 3/4 cup (180 grams) semi sweet chocolate chip cookies
- 1/4 cup dark chocolate nestle chocolate chunks
Preheat oven to 350.
Melt the 1 5 1/2 TBSP of butter.
Crack the 2 eggs, and put in mixing bowl. Dump in melted butter.
Pour in 2 TSP vanilla extract. Add the 3/4 cup of dark brown sugar. Stir.
Add in the 1/2 cup of granulated sugar. Stir again.
Next, add in the salt, cornstarch, baking soda, and baking powder. Stir.
Add in the flour. Stir.
Then add in the chocolate chips (Feel free to add more, I mean what is a chocolate chip cookie without LOTS of chocolate?). Stir.
Scoop out cookies onto a pan in about 1 TSP sizes.
Bake for 9 minutes or until golden brown.
Remove from oven, and let cool.
Eat five of them and realize you need to stop or you will be 500 pounds.
Then eat one more. Because it is REALLY your last one…
